Bake yourself happy! Learn a life-skill to love and share.
A gorgeous, crusty, hand-made loaf can make even the simplest meal heart-warmingly memorable. It is also far better for your health.
Home-baking skips the mega-dose of chemicals found in much store-bought bread, while slow fermentation lowers GI and makes nutrients more accessible to your body. It's good news for every body!
Content and Overview
Our hands-on course walks you step-by-step through five different projects, each designed to highlight different aspects of artisan baking.
We'll take you through the uninterrupted 'straight run' from mixing to baking on each project, and we'll also show you how to use your fridge if you want to slow down the process. This creates flexibility so you can easily fit the baking around your life, not fit your life around the baking!
These will give you a practical grasp of such concepts as kneading and gluten development, fast or slow fermentation, the relationship between rising time and dough temperature, hydration, leavens, proving, shaping and baking.
Mastering basic artisan breads will give you the confidence to impress your friends and family and to create recipes of your own. We hope it will also inspire you to progress into the magical world of sourdough with our forthcoming course on Udemy, Artisan Sourdough Made Simple.
Here are a few of our favourite 5 star testimonials from our other courses:
I gave five stars because the genuine enthusiasm of Penny and Dragan is so infectious, and all the various aspects are explained and demonstrated in such an easy to follow manner. I felt drawn in and couldn't wait to get a starter going. I'm looking forward to the time when I have rocked & rolled & chafed and, hopefully, ended up with a lovely smooth ball of dough - like the one that Dragan cradled in his hands so affectionately. Looks a little like play dough for grown-ups. George.E. Morley
Penny and Dragan removed the mystique surrounding sourdough and made it very "do-able." Really love the FAB recipe! Bobby Ollar
…The bonus too is they show the stages of dough development clearly and this was something I struggled to understand before this course. They keep it simple as bread baking should be. I'm really looking forward to more courses. Julia Bilecki
Dragan and Penny! Thank you for putting together such an awesome course. Incredible support, you know what you are talking about. Very insightful course. I really learned a lot, all of the additional advice/tips very helpful and useful. All the best for you. Marcelo Ariatti
The videos are priceless! Aden

Dragan Matijevic
Lifelong bakers Dragan Matijevic and his wife, Penny Williams, set up their first microbakery in Oxford, 2008, selling artisan bread to locals from "The smallest bakery in the world" - a tiny, converted garden store. It was originally intended as a side-project, something to complement their freelance incomes as a magician (Dragan) and a copywriter/ translator (Penny). But the bread had other ideas! It proved such a success that they were soon baking six days a week, and being asked to give classes.
In 2012, Dragan and Penny moved to Devon, establishing The Artisan Bakery School in a rambling Devonshire cottage with a good kitchen and a slightly bigger bakery. They now offer a wide range of one-day classes or baking mini-breaks, from Beginners through Artisan Sourdough & Rye, Woodfired Pizza, Viennoiserie, Gluten-Free, Wheat-Free and Heirloom Grains, Heritage Techniques.
The Artisan Bakery School focuses on teaching people how to bake bread with integrity. That means authentic techniques, and ethical ingredients: no chemicals, no preservatives, no cheating and no cutting corners. We also show people who are time-poor how to fit real, slow-rise bread into their hectic lifestyles with minimal effort. We think baking should be fun and there’s no reason why you have to be a slave to your dough!

Just started the course so cannot give a full review. However, the teachers Penny and Dragan are very knowledgable and have good personalities which makes the teaching less intimidating and fun to learn. The instruction is clear and to the point. They speak like old friends who are in the kitchen with you and I am looking forward to the rest of the course.

I'm impressed by the expertise of the instructors, their enthusiasm for baking, and their ability to teach well. I appreciate being taught why each part of the process is necessary and what it does to the dough. This helps me understand what has gone wrong in my attempts to bake bread in the past (before taking this course) and what to do in the future. I especially appreciate the instructors treating baking as a skill to be learned instead of just providing a formula (recipe) to be followed. They state different flours will give different results and teach how to get good results from the ingredients you're working with.

Instructors be like Penny and Dragan :) I happen to stumble upon the course (and Thank God for that!) and once I went through the preview I was very happy because this was exactly what I have been looking for... The lovely couple are BREAD MAGICIANS! :) I adore how their teaching is so old school, traditional and absolutely authentic and honest! They teach literally HOW to bake a bread and not just share recipes and that is exactly HOW one should learn :) I felt I was in a country side cottage when I went through the entire course :) there is so much to learn and the knowledge is vast.. I tried one of their techniques to knead a dough and I was doing my happy dance in the kitchen! (my mother thought I was crazy, ha ha) I was so happy that I was grinning like The Grinch :D (no kidding!) Penny says in one of the videos that baking should be enjoyable, relaxing and easy - THIS is exactly why I was doing my happy dance, never had I ever felt so relaxed when I kneaded a dough :) Also they are so generous that no matter what you ask, how much you ask and any number of times you ask they ALWAYS respond instantly! Dragan - I really appreciate your patience! :) I did as suggested by them and went through the entire course - This actually helped me figure out what exactly I have to focus on, plan and practice accordingly. I cant wait to get started! :) I am in love with the course, in love with the content and in love with the lovely couple :) Thank you so very much!

Never having baked before (let alone bread!) this was an ideal course. Well structured with both documents, videos and recipes to gently guide you through the basics of 'natural' bread making but with plenty of tips and facts to understand not only how the processes are carried out but why. The relaxed and experienced presentation by the tutors Penny and Dragan made the whole course enjoyable. The ability to post questions directly to Dragan was of great benefit. I thoroughly recommend this course. I enjoyed it so much I've signed up for the next in the series - Artisan Sourdough! Regards Ian

Some of the written material is scant on information. Watched 1st recipe video and when hand mixing ended, dough was rough, next scene rock and roll starts and dough has advanced, what is the time difference between the 2 steps

I really like how there is not a lot of excessive conversation. All the information shared has a point and is there because it is important to know; very helpful. Penny and Dragan are so down to earth and it feels like they really just want to help us be successful. They have taken away all the fear of failure I hade entering this course!

The course was very informative, done in a very relaxed and experienced way. Knowing what equipment you need to accomplish, making the bread was beneficial. Being able to print out the recipes was a bonus. The quiz at the end was great, it enable you to recall what you've learnt. No pressure was added to do the quiz, it was personal choice. The course was worth every penny. Can't wait to put everything into practice, and taste my results. A big thanks.

Pro: I really liked learning about the Rock and Roll kneading technique. It looks easy and seems it would be a great way to strengthen the gluten quickly. I enjoyed having written material to read in preparation for the video. The instructors are friendly and enjoyable to watch. Con: A beginner needs to know not to cut into the baked loaf until the bread is cooled and the reason why. I was surprised we weren't advised to take the temperature of the bread to assure it was cook (e.g. 200 degrees F). We were advised to take the temperature of the dough but wasn't informed why to do it.

This was my first course with The Artisan Bakery School and although I baked quite a bit before I have come across lots of useful tips that will improve my baking a lot. I like that the principles of baking are explained very clearly bringing my understanding to a new level. It makes sense that to know the dough is the most important thing for aspiring bakers. I am looking forward to the sourdough course now!

Now I know how to do my favourite common bread types, especially chuffed with focaccia as this I buy lots from supermarkets and my goal is to drop as much ready made food out of my lifestyle as possible. Great teachers, great material. Ready for more!
